According to Charles Schumman’s bible, The American Bar, Tom is “the most famous of the collinses”.
First created in 1876 by Jerry Thomas, the father of American mixology. The Tom Collins is a lovely refreshing drink to make on a hot summer day.
- 2 oz. London dry gin
- 1 tsp. superfine sugar (or sugar syrup)
- 1/2 oz. lemon juice
- Club Soda
- Stir first three ingredients well over ice cubes in a Collins glass.
- Fill the glass with soda, garnish with a lemon slice – for a cheeky retro feel add a cherry.
